Hello everyone !!!
We have moved to southern Utah for more than 4 months . We started to settle down fast -kids started school in mid August, My husband started his work and I am going to school.
Thanks goodness we live with our in laws so we get the benefit of free baby sitting ,my husband work is close and I don't really spent much time on kids to school just get them ready to their school bus stops and my school is 5 mins away.

We are fortunate to be able to do all these at this time of our lives.
I would love still to blog but sure it will be less. I am still want to do more Laotian lessons. There will be more medical terms since I am taking Medical coding.
I can't wait to finish my school next June cause this will help me get another job and possibly to work from home.
I'll see you next post with Medical Terms in Laotian. For now I got some of the pictures of the town we living.

Day in Lao is  " Wan" and  Month is Deurn and Year is Pii
But the word order is quite opposite from English.
For example: Monday - Wan Jan- ວັນ​ຈັນ
Here are the days of the week.
Wan Khan ວັນ​ຄານ - Tuesday
Wan Phoud ວັນ​ພຸດ - Wednesday
Wan Pha Hud ວັນ​ພະ​ຫັດ -Thursday
Wan Souk ວັນ​ສ​ຸ​ກ - Friday
Wan Sao ວັນ​ເສົາ - Saturday
Wan Aar Thid ວັນ​ອາ​ທິດ - Sunday
Let's look at months of the year. There are two way to communicate about months. Easy way if you learn about numbers you can just use number after the word month which is " Deurn " ​ເດືອ​ນ and the other one is just remember each month's names.
I am listing easy way, the formal way,phonetic and Lao written words respectively.

It took me a while to get used to but I still mess up once in a while if I have to date any paper.
Pii Song Pun Sib Ha -ປ​ີ​ສອ​ງ​ພັນ​ສິ​ບ​ຫ້າ.

Spring Break in St. George Southern Utah






Let's the spring break begins.  St. George Utah here we come, this is a small town in Southern Utah- 2 hours north of Las Vegas. My husband grew up there, where his friends are still living there and have kids the same ages as ours. It is not only our spring break vacation but also as part of preparing to move there so that we can see the town and meet up with old friends. We went there two months ago and we had decided that we are moving.

Why do we want to move from California? you ask:
Even though there are average 350-day sunshine in a year, the beaches are just within 15 minutes, the parks  are every corners of our neighborhood , and Disneyland is just 20 minutes away. Kids also go to great school .These benefits do not really make us happy ( I and my husband).

Why are we not happy? you ask:
Living in California is so frustrated. The housing  costs us 50 % of our income ( one income ). My husband works too hard to sustain us but has no time to rest and enjoy his growing kids.
Our family is growing so does expenses. Beside we are in the rat race.

Why do we choose St. George? you ask:

There are many reasons. First is low rent because we are going to be renting part of our in law's house ( basement). Secondly we are hoping to have a slow pace- family oriented life. Lastly the cost of living is going to be cut down a lot if my husband keeping the same job.

If everything goes well as plan we could or would be able to save enough for down payment for our first home soon.
The move is just a step closer to live simple. Here is what I wrote about how to start living simply into minimalists.

Yard Sale Day in Socal

One of the benefits of living in Southern California is that you can practically have a yard sale any time of the year.

We have lived in Tustin for over 10years and especially in our neighborhood for 3 years we never had a single garage sale until over 2 months ago when my in law was moving to Utah and they needed a place to get rid of their stuffs. So we decided to do garage sale and I did with them. Now I am hooked.

Today I made my second yard sale and it was great to be able to get to rid of stuffs and also made some money a long the way. I am so tired , I am not gonna lie . That is only one fifth of the stuff that is gone. Decade of accumulation with three kids -toys and clothes and entertainment  electronics are the stuffs in our house . Clothes, toys and electronics yet are the most sought after at garage sale.

When I first moved to USA ,I was so appalled that American families got a whole room dedicated for toys for their kids and I never thought that it could have happened to us. It is just creeping without we even know it.

Looking back I was actually coming from pretty simple culture where we don't have toys to play let a lone a whole room for it. I remember when I had first kid we had a manageable toys and I had time to play with him like Thomas the tank engine. We could spent hours making Lagos to make engine shed.
Right now I got three kids which of course I barely have time  or appreciate playing time. I just keep cleaning and organizing. Uugghhhh. If I would give advice to my own self, I would pick only a few toys for my kids and spend more time together than just let toys be a representative of a fun time from me.

After 10 years we accumulate 3 of kids of our own along with toys and stuffs that are actually holding us back. We are now ready to move on and I want to make it  simple and  painless as possible.

Part of living simple we can declutter and intentionally put a stop to bringing new things. I promise to myself that I will give our life a clean slate a new way to start living simply.

My husband wants to only have suitcases and that is not practical. We are just going to gradually have less belongings and focus on spent quality time with our growing kids. And by the way we are moving soon to southern Utah.

We are getting there slowly and finding our ways to live simply happy.

"Sii"means color and sometimes you can omit the word  and also when you want to say  light  you use  " Orn" and dark " Kair" place after the color words.

       Dark Green = ( Sii) Kiew Kairສີ​ຂຽວ​ແກ່

I have tried to highlight the gold and yellow differently but they are obviousely not much different. Please ignore that and also balck and white I can't highlight them.

Pan Fried Teriyaki Salmon with Rice and Stirfried Mix Vegetable.



We can make this dish within 30 minutes. First get the rice cooking while you get the Salmon and vegetable ready.










Pan-fry Salmon on nonstick pan for 15 minutes,seasoned with salt and pepper , cooked one side half way through before turning the other side. After the Salmon is done, put on a plate.





Use same pan add little oil and minced garlic on the pan cooked for a few seconds then put the vegetable mix and fried seasoned with salt and pepper let cook through. My mixed vegetable includes mushrooms, asparagus and butter squash. ( Pick vegetable you like to add the fiber in your diet and it really complete the simple dish)


While your vegetable is cooking you can make the Teriyaki Sauce
Here is the Teriyaki sauce ingredients:
1/4 Cup Soy Sauce
1/4 Cup Mirin
1 Tablespoon Sugar
( I use half soy sauce and half teriyaki soy sauce since I have it on hand if you don't have Teriyaki soy sauce is totally fine. It is actually what the recipe called for. )

You can boil in the small sauce pan to thicken and comes together . I just run it through microwave 30 seconds a few times until thicken.

Dish your dish with some cooked white rice and some stir fried mix vegetable and the Salmon and drizzle or pour generously on the fish and enjoy.

Why do ballons fly up in the air?


After lunch we were having a little chat with my boys. Sometimes I wish I homeschool them so I can enjoy them all day.( many times they make me want to disappear)
I was sharing my confession when I first got here in the US I hated peanut butter jelly sandwiches. I hated seeing kids eating them, tauching them,talking about them and clinged everytime to see whoever ate them.
Anyhow that was the past and now I am serving them to my kids. They asked me why I hated ? So my easy answered it is because I am not an american. I have yet known anyone that doesn't like peanut butter and jelly sandwiches.
Anyhow the point is not peanut butter thing. The point is I get to share this with them so they can learn more about me and know that i didnt grow up with it and its OK to not like things as everyone else.

Now they asked if I like it now. I am still not a fan I can eat when I have nothing to eat. Oops now you know I don't have anything better for them eat.

So we had some fun converstioned about lots of things and
Andrew(5) asked "Mama why balloon fly up in the air?"
Me answered proudly :" you meant helium balloon? Because it is filled up with helium gas and helium is lighter than the air so it flies.
Andrew said:" No...because the guy holding it let it go."
Lol we all laugh out loud.

How To Make Yogurt At Home The Easy Way



I usually make my yogurt at home by using yogurt maker. I like it plain, my husband likes it sweet with honey, my kids like it with fruit. We all love yogurt.


Its pretty easy actually if you have a yogurt maker. You just heat the milk up to 180 degree then let it cool down to 110-115 degree before you put the starter. Pour in the small jars let it in the yogurt maker for 8 hours at least before it becomes yogurt.
So heating the milk over the stove top on a pot is an old way that I used to do. I now use the glass jar and heat it in the microwave which I don't have to worry about it going to boil over or scorch. I got this short cut from reading the review on Amazon.com anyhow I'll include the model that I use on my Amazon link Yogurt maker and Thermometer
The health benefits of yogurt for me is it helps me regulate. We also put some in our smoothies and sometimes in baking.
So let see how easy to make it at home and cleaning is also a breeze.



Tools:
Big glass Jar ( that can hold enough milk)
Yogurt Maker
Starter ( I use store bought yogurt maker)
Thermometer
Microwave

I like this model there is option for I want to make more yogurt I can just use bigger jar that have a bigger dome cover.





I use 36 oz milk + starter will add to milk after heating later.

( my yogurt maker makes 7-6 oz jars I also put the maker on the jar so it easy every time I make I don't have to measure just pour the milk to the mark)


Put the milk in the big jar and heat it and bring the temperature up to 180 degree by heating  2 minutes interval in the microwave until it reaches the desire temperature.


Once it heat up to 180. I take it to cool down in the cool water tub. Mine takes like 8 mins. If you want it faster you can put ice on your tub so it could take only 5 mins.


Let it cool down to 110 or 115 then put the starter mix well  and this is the time if you want to sweeten up with honey then pour it into the small jars and let it do the magic in the yogurt maker for 8 hours.



Then enjoy fresh for cool them in the fridge enjoy it cool.

Update on bike riding...


Hi everyone welcome back.
I am still riding a bike two times a week. It becomes a tiny bitty easier but still some sluggish. It wasn't easy when I first started because it was totally new thing that I have to get used to the road and traffic flow not even counting all the pain going uphills.
I leanrt some traffic lights discreminate you ( "you" I meant bikes not cars). I was waiting on the turning lane which  just kept me waiting  and waiting and after two circles I knew that something was wrong, so I learnt to take the pedestrain route and use the crosswalk light in some intersection instead.
My body still somewhat looks the same but I have more energy than before. When I got home I would get more things done than I would have done.
At the end of the day you sleep well then you know you did something good.
However my new transportation arrangement did not stop us from having a second car. Yup you heard that right we got a NEW CAR !!  
It is used but new to us , unfornuately  it solved one problem but created another problem.  This definately put us back to where we were before.
That is our life so far but it is not over yet. I won't give up. we will wait and see what is going to happen next.

Easy Cheesy Chicken Broccoli Rice Casserole


Cheesy Chicken Broccoli Rice Casserole


This is fairy easy to put together. There are a few ingredients that you need such as chicken, rice, brocolie and cheese. I read so many recipes and I don't know which one to follow after I tweaked a bit and most of the time I am guessing and put thing together on what I have on hand.







Here is the recipe that I used for today for our family of 5 but it could feed 3 or 4 adults








Ingredients:
1 boneless skinless chicken breast cut into bite size
1 -1/2 cup rice
1 -12 oz you can totally use fresh broccolie and more or double just use less rice(I got the mix one that I have on hand)
1 cup or more of mild Chedder cheese ( I used half- half mozzella and chedder)
1 -10-3/4 oz can cream of chicken or mushrom
1/2 cup of sour cream or mayo
1 tsp of curry powder optional
1Tbsp of lemon juice optional

First cook rice and chiken it should be done on 25-25 min
Then stream vegetables in the microwave if you got fresh one I guess you can cook with rice and chicken but I would put them in the last 5 min.
While cooking the rice -mix cream of chicken, sour cream, curry powder and lemon juice.
Get a cassarole ready (8x8)- pour the cook rice mix then pour over the cream mix and top with cheese then bake for 20 min or less on 350 fahrenheit.

Done!! If you want to make it faster if you can microwave .

Old School

In Laos ,I recalled growing up learning our language by practing our hand writing with chalk and small handheld black board (which might be equipvilent to how kindergarteners to day get to use iPad in USA).
Later grades we practiced hand writing drills on pages and pages. Reading- class would read out loud all together and once in while we would get a turn to recite a passage in front of the class. This was the hardest part for me. I had to memorize, recited to myself and reheard with my mom at home before big day. That was 30 years ago I am sure things must have changed and much better.
Learning becomes easier than before we got many resources to help us learn. I selftaught myself a lot of things and most of the time I learnt from internet and YouTube.
On researching how to make flash cards I strumbled upon Kent's website . He is polyglot and he is currently learning Lao. His site has great resources on Lao such as  his video -Learning Lao tones and Free flashcards.
I admire Kent and people  like him who went a great lengh to learn other languages but also like to teach and share their expertise to others.
we had some exchanges on learning and teaching Lao a short while ago, which gave me some ideas and inspired  of how I hope soon that I would be able to do some video blogs on the lessons.

Tip is reading each consonents outloud and when they are forming with vowels and tonemarkers. However I was trying to sound any short sounds with the other 2 tonemarkers (ອ໊ ອ໋)They didn't sound right and they just cannot be pronounced I don't know.
I just want to simplify the process a bit ,which I don't mean to stop you from learning all the aspects of Languistic. You know what is right for you.

Freezable Korean B B Q Beef


This is an easy dish can be prepared ahead of time that we all need them when we need to throw anything with 30 mins. I usually have couples of  these in my freezer for like easy take out.

Cook the rice and took it out from freezer and cook on medium heat on a frying pan. Voila dinner is done!

I am a native speaker grew up in Vientaine; I can speak, write and read Laotian  in additon to that I can read and speak Thai  as good as my native langugage but my writing is null.

First of all we are a family of 5 with 3 kids age range from 10,5,to 1 years old.

After couple months ebaying ( if you read earlier post Becoming minimalist)  I want to do more on our debt eliminating!!! So I am going to do something drastically but not that impossible.
